Fluffy Vegan Apple and Vanilla Pancakes (Gluten Free)

When we think of pancakes, the golden moments of childhood come to mind, filled with the scents of cinnamon and apples. But what do you do when your diet requires cutting out eggs, dairy, or even wheat and gluten?

For many years, I’ve searched for the perfect vegan pancake recipe that wouldn’t compromise on taste or texture compared to traditional ones. And here it is! This recipe is the answer to all my culinary dreams (and hopefully yours too) – introducing perfectly fluffy vegan, gluten-free, apple and vanilla pancakes.

In this recipe, we’ll combine juicy apples with the sweet scent of vanilla to create light and airy pancakes that will turn your morning into a delightful feast. Ready for a tasty journey into the world of vegan delights? Let’s dive in!

Ingredients

  • 1 very ripe banana
  • 125 g (4.4 oz) plant-based natural yogurt (coconut or soy, for example)
  • 3 tablespoons rice flour
  • 2 tablespoons buckwheat flour
  • 2-3 tablespoons tapioca flour or cornstarch
  • ¾ teaspoon gluten-free baking powder
  • ⅓-½ teaspoon Bourbon vanilla powder
  • ⅓ teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • 1 small apple (grated)

Instructions

  1. Mash the ripe banana in a bowl with a fork.
  2. Stir in the yogurt.
  3. Add the flours and vanilla. Stir it all together.
  4. Mix in the baking powder, baking soda, and apple cider vinegar.
  5. Fold in the grated apple. Combine well.
  6. Cook on a dry skillet or with a teaspoon of coconut oil.

Makes approximately 10–12 pancakes.

Notes:

Rice and buckwheat flour can be replaced with any universal gluten-free flour mix or just use wheat if you prefer/can consume it.
